As one of the SpinDizzy Easter bunnies, I enjoy coloring eggs for my Easter basket. \u00a0After the holiday I am usually left with a lot of eggs that I wasn\u2019t able to give away. \u00a0This year, I decided to make my surplus eggs into coronation egg salad sandwiches.<\/p>\n
Coronation chicken \u2013 so called because it was created for Queen Elizabeth II\u2019s coronation \u2013 is a popular dish in Britain, often eaten on sandwiches. \u00a0I have borrowed the two most distinctive flavors of coronation chicken, curry and apricot, to make this very simple egg salad recipe. \u00a0It makes four sandwiches.<\/p>\n
Ingredients<\/strong><\/p>\n Preparation<\/strong><\/p>\n Chop the eggs into small pieces and place in a bowl. \u00a0Add the mayonnaise, apricot preserves, and one tablespoon of curry powder, and stir with a fork until mixed well. \u00a0Add additional curry powder to taste. \u00a0Spread the egg salad mixture onto the bread slices to make four sandwiches.<\/p>\n Note About Eggs<\/strong><\/p>\n Please use eggs from humanely-raised chickens. \u00a0Visit the World Society for the Protection of Animals\u2019s Eat Humane<\/a> site for help locating humanely-raised eggs at your local grocery store. \u00a0In the United States, Hellmann\u2019s (also known as Best Foods) Light mayonnaise is now being made with eggs that have been certified humane<\/a>. \u00a0This has not yet extended to their other products.<\/p>\n <\/p>\n\n
